Raw Mango and Mint Cooler
INGREDIENTS
Raw mangoes | 250 gms |
Green chili | 2 Nos. |
Roasted cumin powder | 1 tsp |
Asfoetida | 1 pinch |
Coriander leaves | 3 sprigs |
Mint leaves | 10 sprigs |
Black salt | 1 tsp |
Rock salt (sendha namak) | 1 tsp |
Jaggery (dissolved in water) | 15 gms |
Chilled water | 1 litre |
Ice cubes | as needed |
METHOD OF PREPARATION
- Wash the mangoes thoroughly.
- Remove the eye and boil in minimum possible water until done and mushy.
- Remove from fire and let it cool in the same water.
- Meanwhile, slit the green chilies and deseed. Clean and wash coriander and mint leaves.
- Remove the mango peel and make sure to squeeze out all the pulp from the skin and seed in the cooking liquor. Discard the skin and seed.
- Put the mango pulp and all the other ingredients except water and ice into the blender. Blend until smooth and shiny.
- Add chilled water and blend for another few seconds. If there are more fibers, you may strain it.
- Adjust the seasoning, pour over ice cubes and serve chilled.
