Seekh Kebab - Skewered Lamb mince Kebab


Ingredients

Mutton mince

500 Gms.

Marinade

 

Raw papaya Paste

2 Tbsp.

Fried onions 

4 Tbsp.

Ginger paste

1 Tbsp.

Garlic paste

1/2 Tbsp.

Green Chili -Minced

3 Nos.

Fresh Coriander

Small Bunch

Garam Masala Powder

1 Tsp.

Red Chili Powder

1 Tsp.

Roasted Chana dal Powder

3 Tbsp.

Egg

1 No.

Salt

To Taste

Basting and Garnish

 

Butter

2 Tbsp.

Lime

1 No.

Mint chutney

 

Salad

 

Method of Preparation

  • Grind the mince once. Mix ginger, garlic & papaya paste.
  • Tie the mixture in muslin cloth & hang for some time to remove excess water.
  • Fry onions slices until golden brown & crisp. 
  • Place it on kitchen paper to remove oil & crush nicely.
  • Remove mince from the muslin cloth & add minced chili, chopped coriander, Garam masala powder, minced onions & red chili powder.
  • Keep aside for 4 hours.
  • Just before cooking add salt, Chana dal powder, egg & mix well.
  • Divide mince into equal size balls & press the mince onto the skewers & shape like sausages with slightly wet hands. 
  • Put the skewers in to the moderately hot tandoor & cook for 8 minutes.
  • Remove from tandoor & hang the skewers to let the moisture drip. 
  • Baste with butter & put back for another 5 minutes or until done.
  • Remove from tandoor, brush with butter.
  • Remove gently from the skewers and cut into equal size.
  • Garnish with chopped coriander & serve hot with salad, chutney & lime wedges.
